Barbecue Pineapple Chicken

My mom is obsessed with this barbecue pineapple chicken. She loves everything with pineapple in it, and this dish delights her! It is incredibly easy to throw together with chunks of BBQ sauced chicken, fresh pineapple chunks, onion, bell peppers, slight heat from the jalapeno, and your favourite barbecue sauce. Serve this savoury and sweet barbecue pineapple chicken with rice or over green salads for a simple, quick, and filling meal. Make sure to spoon generous amounts of sauce on top!

Ingredients

1 onion large, sliced

1 c barbecue sauce of choice divided

2 pounds boneless skinless chicken breasts chopped

1/2 teaspoon salt

1/2 teaspoon black pepper

1 jalapeño seeded and diced

2 bell peppers red and or green, chopped

12 ounces pineapple chunks fresh or frozen-thawed

How to make Barbecue Pineapple Chicken

Step 1: Prepare the oven. Preheat it to 200 degrees C or 400 degrees F.

Step 2: Using a cooking spray, grease a baking dish and set it aside.

Step 3: Prep the ingredients, start by thinly slicing the onion. Slice the bell peppers into small pieces and the jalapeño into small pieces, removing the seeds.

Step 4: Add the chicken pieces into a mixing bowl as well as 2/3 cup of BBQ sauce. Toss the chicken until well coated. Place it inside the fridge to marinate for at least 15 minutes.

Step 5: Scatter the onions into the prepared baking dish, then place the chicken, pineapple, and bell peppers on top.

Step 6: Brush the top with the rest of the BBQ sauce.

Step 7: Sprinkle salt and pepper to season.

Step 8: Place it inside the preheated oven and bake for about 35 minutes or until done.

Step 9: Remove from the oven when done and serve the barbecue pineapple chicken right away. Do not forget to spoon the sauce over the chicken. Enjoy!
