Banana Cream Pie Cupcakes

Prep Time: 30 mins | Cook Time: 15 mins | Total Time: 45 mins | Yield: 24 Servings

These Cupcakes are to die for! Give this recipe a try and enjoy!

Ingredients:

CRUST

4 cups Nilla wafer crumbs

1/2 cup butter, melted

FILLING

1 small box, instant banana pudding or 1/2 large box; prepared

CAKE:

1 box white cake mix, plus oil & eggs per package directions

1/2 banana, mashed

2 teaspoons banana extract

FROSTING

2 cups heavy whipping cream

1-2 teaspoons clear vanilla extract

4 Tablespoons powdered sugar

GARNISH

24 Nilla wafers

2 Tablespoons raw sugar to sprinkle on top

Directions:

To Make the Crust:

Step 1: Line with paper liners the standard muffin tins.

Step 2: Add the melted butter and Nilla wafer crumbs in a food processor. Pulse well mixed.

Step 3: Fill each lined muffin tin with 1 tablespoon of the cookie crumbs, then press each hard to make a crust.

Step 4: Place the muffin tins inside the oven and bake for 4 to 6 minutes at 375 degrees C or until golden brown.

To Make the Cake:

Step 1: Refer to the directions provided on the package of the cake mix on how to prepare it.

Step 2: Add the banana and banana extract into the bowl with the cake mix. Stir until well mixed.

Step 3: Fill each crust with the cake batter.

To Make the Filling:

Step 1: Refer to the directions provided on the package of the filling on how to prepare it. Place it inside the fridge to chill.

Step 2: Run a knife in the middle of each cupcake to make a small long hole. Fill each hole with the filling.

For the Frosting:

Step 1: Add 2 cups of heavy cream into a large mixing bowl. Whisk until soft peaks form.

Step 2: Add the sugar and vanilla. Whisk until the texture becomes stiff.

Step 3: Place the bowl inside the fridge to chill for about 30 minutes.

Step 4: Frost the cupcakes and sprinkle sugar on top.

Step 5: Top each cupcake with Nilla wafer, then place them inside the fridge to chill.

Step 6: Serve and enjoy!
