BANANA CAKE WITH BUTTERCREAM FROSTING

I love bananas! It’s like my partner in crime, and it’s the fruit that I always eat every day – as is or by incorporating it to my daily meals like pancakes, smoothies, and now this. Before I used to eat just banana cakes but with buttercream frosting it’s like a whole new level delicious! The cake is super moist, and the frosting is sweet but not too sweet plus it’s very easy to make. I mean what not to like? It’s a classic banana cake dress in a delightful frosting. Mouthwatering!

INGREDIENTS

TO MAKE THE BANANA CAKE

3 cups sifted cake flour

1 tablespoon baking powder

1 1/2 teaspoon baking soda

3/4 teaspoon salt

3/4 cup shortening

2 1/4 cups granulated sugar

3 eggs, well beaten

1 1/2 cup mashed ripe bananas (about 4 bananas)

1 1/8 cup buttermilk

1 1/2 teaspoon vanilla extract

FOR THE BUTTERCREAM FROSTING

3/4 cup hot milk

1/2 cup butter

1/2 cup shortening (butter flavored Crisco not recommended)

1 teaspoon vanilla extract

1 tablespoon cornstarch

1 cup granulated sugar

HOW TO MAKE BANANA CAKE WITH BUTTERCREAM FROSTING

BANANA CAKE

Step 1: Prepare the oven y preheating it to 375 degrees. Grease and flour two 9-inch pans.

Step 2: In a large bowl, sift in the flour. Add in the baking powder, baking soda, and salt. Mix until incorporated and set aside.

Step 3: Now, cream the shortening while slowly adding in the sugar, beaten eggs, and bananas. Stir until well blended.

Step 4: Empty the mixture into the greased and floured pans. Place inside the oven and bake for 25 to 30 minutes.

BUTTERCREAM FROSTING

Step 5: Meanwhile, to make the buttercream frosting, heat the milk. Only steam the milk, do not boil and make sure to check it occasionally.

Step 6: Stir in the butter and shortenings. Mix until the mixture is soft and incorporated.

Step 7: Then, add the milk gradually into the sugar mixture. Mix thoroughly until the sugar is dissolved and the consistency is thick enough to spread.
