10 Chicken Wings segmented into tips, ‘wing’, and drumettes (total 30 pieces)
2 teaspoons Baking Powder powder, not soda
1 teaspoon salt
1 teaspoon Black Pepper freshly cracked (optional)
How to make Baking Powder Chicken Wings
Step 1: Into a bowl, place the segments of the chicken wings after breaking them down along with the baking powder and salt. Using your hands, mix everything, coating the segments well, and spreading it evenly on the pieces.
Step 2: Prepare the oven. Preheat it to 120 degrees C or 250 degrees F. Onto a baking rack, place the segments without touching each other. Put another tray beneath the baking rack in the oven to catch the drippings and bake the wings for about 30 minutes. Adjust the oven temperature to 220 degrees C or 425 degrees F and continue to bake for 40 minutes more.
Step 3: Take the wings out of the oven when done and sprinkle with pepper if desired. Enjoy hot!

You can keep the wings in the fridge for about a week but keep in mind that the chicken may lose its crispiness because of the moisture buildup.
