Baked Zucchini Fries

Prep Time: 15 mins | Cook Time: 20 mins | Total Time: 35 mins | Yield: 4

Crispy baked zucchini fries with almond flour and parmesan breading. This delicious side dish is best to serve with your fave dipping sauce or as is. I have the pickiest eaters. I cannot make them eat veggies without crying or fighting. But these zucchini fries changed everything! Other than chips, mac and cheese, and pizza, this here is one of their most favourite!

INGREDIENTS

2 medium zucchini

2 Egg whites or 1 Egg, whisked

1/2 c almond flour (or almond meal)

1/2 c grated parmesan cheese

2 tsp Italian seasoning

1 tsp sea salt

How to make Baked Zucchini Fries

Step 1: Prepare the oven. Preheat it to 425 degrees F.

Step 2: Using cooking spray, grease a baking sheet or line with parchment paper.

Step 3: Combine the almond flour, parmesan cheese, Italian seasoning, and salt in a small bowl.

Step 4: In half lengthwise, slice the zucchinis, then slice each piece into two widthwise, and again into 4 to 6 fries. Make sure to keep them in the same sizes.

Step 5: Into the egg wash, dip the pieces of zucchini, shake the excess off, and dredge them into the almond flour parmesan mixture.

Step 6: Onto the prepared baking sheet, transfer the zucchini fries. Do this for the rest of the pieces of zucchini.

Step 7: Bake in the preheated oven for about 10 minutes. Flip the pieces of zucchini and bake for 10 minutes more or until the zucchini fries are crisps and golden brown.

Step 8: When done, immediately take the zucchini fries from the oven and enjoy with your face dipping sauce.

NOTE:

Substitute cheese with nutritional yeast for a dairy-free variety.
