Baked Sweet and Sour Chicken

This homemade version of the popular take-out dish baked sweet and sour chicken is healthier and a million times better! Incredibly easy to throw together using only basic ingredients. This sweet and sour chicken is crisp on the outside. The sweet and sour flavor fused right into the juicy chicken. Serve this flavor-packed baked sweet and sour chicken over rice garnished with some sesame seeds and chopped green onions.

Ingredients

2 large eggs, beaten

1 lb boneless, skinless chicken breasts, cut into 1” chunks

½ c. cornstarch

¼ c. vegetable oil

Kosher salt and freshly ground black pepper, to taste

SWEET AND SOUR SAUCE:

1 tbsp soy sauce

¾ c. sugar

¼ c. ketchup

½ tsp garlic powder

½ c. apple cider vinegar

How to make Baked Sweet and Sour Chicken

Step 1: Prepare the oven. Preheat it to 325 degrees F. Using a nonstick spray, lightly grease a baking dish.

Step 2: In a large bowl, place the sugar, vinegar, ketchup, soy sauce, and garlic powder. Mix well and set aside. Sprinkle the chicken with salt and pepper.

Step 3: Place the chicken in a large bowl. Season with salt and pepper. Add the cornstarch and gently toss to coat the chicken. Into the eggs, coat the chicken one piece at a time.

Step 4: In a large saucepan, heat the vegetable oil. Once the oil is hot, add the chicken to the pan and cook for about 1 to 2 minutes until golden brown. To a paper towel-lined plate, transfer the cooked chicken to drain the excess oil.

Step 5: To the prepared baking dish, place the chicken and drizzle with sweet and sour cream. Bake in the preheated oven and bake for about 55 minutes, flipping the chicken every 15 minutes to ensure that the chicken will be evenly coated.

Step 6: Remove from the oven when done and serve the baked sweet and sour chicken immediately. Enjoy!
