3-4 tbsp butter, diced into small cubes (or ghee)
4 tsp minced garlic (4 cloves)
2 salmon fillets
2 tbsp vegetable broth or chicken broth
1 tbsp of your favourite hot sauce (we used Sriracha)
1 1/2 tbsp fresh lemon juice, or to taste
1 pound (450 grams) medium-thick asparagus, woody ends trimmed
Salt and fresh ground black pepper, to taste
2 tbsp fresh chopped parsley or cilantro
HOW TO MAKE BAKED SALMON IN FOIL WITH ASPARAGUS AND LEMON GARLIC BUTTER SAUCE
Step 1: Prepare the oven. Preheat it to 425 degrees F or 220 degrees C.
Step 2: Lay 2 sheets of 14 x 12-inch or 35 x 30 cm heavy-duty aluminium foil separately on the countertop.
Step 3: Place the broth, lemon juice, and hot sauce in a small bowl. Mix well until combined.
Step 4: Sprinkle all sides of the salmon fillets with salt and pepper, then divide each fillet onto the aluminium foil near the middle. To one side of the salmon, place the trimmed asparagus. Simply follow the long direction of the foil.
Step 5: Season the salmon fillets with more salt and pepper, then sprinkle with garlic. Generously drizzle the fillets and asparagus with the garlic butter sauce.
Step 6: Evenly among the foil pockets, divide the pieces of butter. Layer the butter on top of the salmon fillet and asparagus.
Step 7: Next, wrap the salmon in foil pockets, crimp, and wrap the ends. Wrap the salmon fillet and asparagus not too tight, keeping a bit of extra space inside. This will help the heat to circulate.
Step 8: To a baking sheet, transfer the salmon foil packs, sealed-side upward. Place in the preheated oven and bake for about 9 to 12 minutes until the salmon is completely cooked.
Step 9: Remove from the oven when done and very carefully unwrap the baked salmon. Before serving, drizzle the salmon fillets and asparagus with extra lemon juice and garnish with some fresh parsley or cilantro and a slice of lemon. Enjoy!
