You’ll love every bite of these Baked Potato Slices. Made with potatoes, cheese, bacon, and Italian seasoning, then baked to perfection. Warm and soft inside and crispy on the outside. This is the perfect appetizer or party food that pairs so well with steak, chicken, or burgers. An impressive dish that will make you love potatoes even more!

3 russet potatoes, Scrubbed clean
1 tbsp vegetable oil, Canola, or Olive Oil works as well
Salt/Pepper, to taste
2.5 c. cheddar cheese, shredded
6 slices bacon, uncooked
1 tbsp Italian Seasoning
2 green onions, diced
How to make Baked Potato Slices
Step 1: Prepare the oven. Preheat it to 375 degrees. To have crispier bacon, set them aside for at least 5 minutes.
Step 2: Into 3/4-inch pieces, slice the potatoes. Lightly coat the tops of the potatoes with oil using a pastry brush. Flip and coat the other side, then season with salt and pepper. Place the potato slices on a baking sheet and bake for about 25 minutes.
Step 3: In the meantime, cook the bacon on low heat. Periodically flip the potatoes as they cook using kitchen tongs. When done, set the potatoes aside but leave the bacon drippings.
Step 4: Take the potato slices from the oven. Lightly brush the pieces with the bacon drippings. Flip and do the same on the other side. Return to the oven and continue to bake for another 10 minutes.
Step 5: While waiting, start to crumble the bacon.
Step 6: Adjust the heat to 350 degrees. Sprinkle the grated cheese and crumbled bacon on top of the potatoes. Continue to bake for 5 minutes more until the cheese has melted.
Step 7: Remove the baked potato slices from the oven once done and sprinkle with the Italian seasoning. Garnish with green onions and serve with sour cream. Enjoy!
Notes:
For this recipe, you can use Monterrey Jack as well.
If bacon is not available, top the potatoes instead with some steamed broccoli.
You can swap Italian seasoning with ranch seasoning.
To store, place the baked potato slices in an airtight container and the fridge for up to 3 to 4 days. To reheat, pop in a 350 degrees F oven and warm for about 6 minutes.
This dish is great to freeze as well. Omit the green onions and store them in the freezer. When ready to serve, reheat for about 8 to 10 minutes at 325 degrees.
