These potato slices are soft on the inside and crispy on the outside. I love the melted cheese, crispy bacon, and Italian seasoning on top. These are perfect with sour cream for dipping. Crazy easy to whip up and always a huge hit!

1 tbsp vegetable oil, Canola, or Olive Oil works as well
3 russet potatoes, Scrubbed clean
6 slices bacon, uncooked
2.5 c. cheddar cheese, shredded
2 green onions, diced
1 tbsp Italian Seasoning
Salt/Pepper, to taste
How to make Baked Potato Slices
Step 1: Prepare the oven. Preheat it to 375 degrees. Set the bacon aside for at least 5 minutes before using it to make them crispier.
Step 2: Into 3/4 inch pieces, cut the potatoes and lightly coat the tops with oil. Do the same on the other side, then sprinkle with salt and pepper. Place the potato slices on a baking sheet and bake in the preheated oven for about 25 minutes.
Step 3: Meanwhile, cook the bacon on low heat, flipping the strips periodically using kitchen tongs for even cooking. Once done, set the bacon aside, leaving the bacon drippings.
Step 4: Once the potatoes are done, take them from the oven and lightly brush them with bacon drippings. Do the same on the other side. Return to the oven and continue to bake for another 10 minutes.
Step 5: In the meantime, crumble the bacon.
Step 6: Remove the potatoes from the oven, then reduce the oven temperature to 350 degrees. Now, top the potatoes with grated cheese followed by the crumbled bacon. Place the potatoes back in the oven and resume baking for 5 minutes more or until the cheese has melted.
Step 7: Before serving, sprinkle the potatoes with Italian seasoning and garnish with some green onions. Enjoy the baked potato slices with sour cream.
Notes:
For this recipe, you can also use Monterrey Jack.
You can also top the potatoes with steamed broccoli in place of bacon.
Feel free to swap Italian seasoning with Ranch seasoning.
Place the baked potato slices in an airtight container and store them in the fridge for up to 3 to 4 days. When ready to serve, reheat for about 6 minutes in a 350 degrees F oven.
You can also freeze these potato slices, just leave the green onions out. Reheat for about 8 to 10 minutes at 325 degrees oven.
