These potatoes are crispy outside and soft and warm inside. Amazing baked slices of potato with melted cheese, crispy bacon, and Italian seasoning on top. Enjoy this with sour cream for dipping, and immediately grab a piece or more before it’s all gone!

3 russet potatoes, Scrubbed clean
1 tbsp vegetable oil, Canola, or Olive Oil works as well
Salt/Pepper, to taste
2.5 c. cheddar cheese, shredded
6 slices bacon, uncooked
1 tbsp Italian Seasoning
2 green onions, diced
How to make Baked Potato Slices
Step 1: Prepare the oven. Preheat it to 375 degrees. Set the bacon aside for at least 5 minutes.
Step 2: Into 3/4-inches pieces, slice the potatoes. Lightly coat both sides of the potatoes with oil using a pastry brush and sprinkle with salt and pepper. On a baking sheet, place the potato slices and bake in the preheated oven for about 25 minutes.
Step 3: Meanwhile, cook the bacon on low heat, flipping them sporadically using kitchen tongs for even cooking. When done, set the bacon aside but leave the bacon drippings.
Step 4: Take the slices of potato from the oven and lightly brush both sides with the bacon drippings. Return to the oven and bake for another 10 minutes.
Step 5: Crumble the bacon while the potatoes are baking.
Step 6: Adjust the oven temperature to 350 degrees. With grated cheese and crumble bacon, top the potatoes and bake for 5 minutes more until the cheese has melted.
Step 7: When done, remove from the oven and sprinkle the slices with the Italian seasoning and top with green onions. Serve with sour cream. Enjoy!
Notes:
For the cheese, you can also use Monterrey Jack.
Instead of bacon, you can also top the slices with some steamed broccoli instead.
You can substitute Italian Seasoning with ranch seasoning.
Place the slices in an airtight container and store them in the fridge for up to 3 to 4 days. When ready to eat, reheat for about 6 minutes in a 350 degrees F oven until warmed through.
To freeze, leave the onions. To serve, reheat for about 8 to 10 minutes at 325 degrees.
