I love to spice up things and make them more interesting. I promise my kids to come up with amazing side dishes. We love a tasty side dish along with our meal. Without a side, meals will be boring! You can make even the simplest meals complete and amazing with a simple side. I know everyone will agree.
Throwing a side or two does not take too much effort and time. We can make it while making the main dish. Sometimes, we don’t give justice to a side, but never me! I always make sure to whip up the best side dishes! Like this baked potato casserole. It is made with pantry ingredients and ready in less than twenty-five minutes – this casserole tastes insanely good! The best part is, that you can throw this together with very little effort!

Ingredients
1/4 c. Unsalted Sweet Butter
6 potatoes
3 Strips of Bacon, Cooked (Crispy)
1/2 c. Shredded Cheese
Salt & Pepper
Chives (Dried)
How to make Baked Potato Casserole
Step 1: After peeling the potatoes, slice them into cubes and cook for about 20 minutes until tender.
Step 2: In the meantime, cook the bacon until crispy. When done, transfer the cooked bacon to paper towels and set aside to cool.
Step 3: Drain the potatoes when done and transfer them into a casserole dish. Over the potatoes, pour the melted butter and sprinkle with salt & pepper.
Step 4: Once the bacon is cool enough to handle, crumble them.
Step 5: To the potatoes with shredded cheese, then crumbled bacon and chives.
Step 6: Place the casserole in a preheated 375 degrees F oven and bake for about 5 minutes or until the cheese has melted.
