Nice and light, this baked firecracker chicken means business! Packed with flavour with the perfect blend of sweet and spicy, your family will surely ask for this over and over again!

The chicken is pan-seared, then baked for that extra flavour. While baking, the chicken is basted up with a sweet and spicy firecracker sauce for that over-the-top goodness. This recipe is not only mouthwatering but insanely easy to make and ready in under thirty minutes. Serve this over rice, pasta, or quinoa with your favourite veggies for an easy and satisfying weeknight meal perfect for your entire family! And make sure to smother the chicken with the rest of the sauce before serving.

Ingredients

1 tbsp oil

1 lb boneless and skinless chicken breasts

1/2 c. brown sugar or honey

1 tbsp apple cider vinegar

1/2 c. hot/chilli sauce (such as Frank’s Red Hot or Sriracha)

2 cloves garlic, grated

1 tbsp soy sauce (gluten-free for gluten-free)

salt and pepper to taste

1 pinch of red pepper flakes

How to make Baked Firecracker Chicken

Step 1: To make the sauce: In a small saucepan, heat the hot sauce, sugar, soy sauce, vinegar, garlic, and chilli pepper flakes until the sugar has completely melted.

Step 2: Prepare the oven. Preheat it to 400 degrees F or 200 degrees C.

Step 3: In a large oven-safe skillet, heat the oil over medium-high heat. Meanwhile, sprinkle the chicken with salt and pepper. Once the oil is hot, add the chicken to the pan and sear for about 3 to 5 minutes on each side.

Step 4: Transfer the skillet into the preheated oven and bake the chicken for about 10 to 15 minutes or until completely cooked, basting the chicken with the sauce every 5 minutes.

Step 5: Remove from the oven when done and serve the baked firecracker chicken immediately. Enjoy!
