INGREDIENTS
¼ c. chopped fresh parsley leaves
1.5 pounds Cod fillet pieces, 4-6 pieces
Lemon Sauce:
2 tbsp melted butter
5 tablespoons extra virgin olive oil
5 garlic cloves, minced
5 tbsp fresh lemon juice
Coating:
1 tsp ground coriander
⅓ c. all-purpose flour
¾ tsp sweet Spanish paprika
½ tsp black pepper
¾ tsp salt
¾ tsp ground cumin
How to make Baked Cod Recipe with Lemon and Garlic
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: In a shallow bowl, add the lemon juice, olive oil, and melted butter except for the garlic. Mix well and set aside.
Step 3: Combine the all-purpose flour, spices, salt, and pepper in a different bowl and set aside.
Step 4: Now, pat the fish dry and dip into the lemon sauce, then dredge in the flour mixture. Make sure to shake the excess flour. Set the lemon sauce aside for later.
Step 5: In a cast-iron skillet or oven-safe pan, heat 2 tbsp olive oil over medium-high heat. Add the fish to the hot oil and sear for about 2 minutes per side to give it some colour. Do not completely cook the chicken.
Step 6: Add the minced garlic to the reserved lemon sauce and mix well. Drizzle this on top of the fish fillets. Place in the preheated oven and bake for about 10 minutes until the fish easily flakes with a fork.
Step 7: Take the dish out of the oven when done and serve right away garnished with some chopped parsley. Enjoy!
