BAKED CHICKEN SCHNITZEL

Real crispy and juicy on the inside – baked chicken schnitzel is your new go-to healthy option for easy comfort food. Serve alongside a salad, mash, or in a bun like a sandwich. Either way, this is going to be perfect always!

Ingredients

1 tablespoon olive oil, or as desired

6 eaches chicken breasts, cut in half lengthwise (butterflied)

1 pinch salt and ground black pepper to taste

¾ cup all-purpose flour

1 tablespoon paprika

2 large eggs, beaten

2 cups seasoned bread crumbs

1 large lemon, zested

HOW TO MAKE BAKED CHICKEN SCHNITZEL

Step 1: Prepare the oven. Preheat it to 220 degrees C or 425 degrees F.

Step 2: Use aluminium foil to line a large baking sheet and drizzle over with an ample amount of olive oil. Then, place inside the preheating oven.

Step 3: On a clean plate, lightly press the chicken breasts to flatten to about 1/4-inch thickness. To taste, season with salt and pepper.

Step 4: Add the flour and paprika on a large pate and whisk until incorporated.

Step 5: Break the eggs in a medium shallow bowl, season with salt and pepper, and whisk until combined.

Step 6: Combine the bread crumbs and lemon zest on a different large plate.

Step 7: Coat the pieces of chicken in the flour mixture, then, soak in egg mixture, and dip in bread crumbs mixture.

Step 8: Into the prepared baking sheet, arrange the dipped and coated chicken breasts and drizzle with more olive oil.

Step 9: Bake in the preheated oven for about 5 to 6 minutes or until cooked through.

Step 10: Once done, take them out of the oven and serve. Enjoy!

Note:

You can use panko instead of seasoned bread crumbs.
