You and your family will love this easy and quick Baked Chicken Parmesan. Juicy, flavorful, and super crispy chicken topped with fresh mozzarella and basil that is perfect to serve over pasta, alongside a salad, veggies, or with garlic bread or breadsticks.

3 pieces boneless, skinless chicken breast
2 Eggs, whisked
1/2 tsp kosher salt
1/4 tsp pepper
1 c. Panko or Italian bread crumbs
1/2 c. grated parmesan cheese
1 tsp garlic powder
2 c. marinara or spaghetti sauce
6-8 oz. fresh mozzarella, sliced about 1/8” thick
FOR SERVING: FRESHLY CHOPPED BASIL AND COOKED SPAGHETTI NOODLES
HOW TO MAKE BAKED CHICKEN PARMESAN
Step 1: Prepare the oven. Preheat it to 415 degrees F. Using nonstick cooking spray, grease a baking sheet or jelly roll pan, and set aside.
Step 2: In half cut the chicken horizontally to make 6 fillets. In a zip-top bag, place the fillets. Using a meat tenderizer or rolling pin, flatten the fillets to about 1/4-inch thick.
Step 3: In a bowl, whisk the eggs, salt, and pepper. In another bowl, add the bread crumbs, Parmesan cheese, and garlic powder. First, dip the chicken in the egg and coat it in bread crumbs.
Step 4: In the pan, place the chicken. Pop in the preheated oven and bake for about 20 to 25 minutes until the fillets are no longer pink in the middle, flipping halfway through baking.
Step 5: Take from the oven when done and spoon about 1/4 cup of sauce over the chicken, then top with a slice of mozzarella cheese. Return in the oven and bake for another 3 to 5 minutes until the cheese has melted. If desired, broil during the last minute.
Step 6: Garnish with some fresh basil or oregano before serving. If desired, serve with angel hair pasta or spaghetti. Enjoy!
NOTE:
Fry the chicken before baking if you’d like them extra crispy. In a large skillet, simply heat half a cup of olive oil over medium-high heat. Cook both sides of the chicken for about 2 minutes into the hot oil (dipping them first in the crumb mixture). Then, bake in the oven for about 18 to 20 minutes.
