Brine:
water
1/4 c. salt
Chicken & Seasoning:
3 tbsp olive oil (or melted butter)
4 chicken breasts (boneless skinless, about 3-4 lbs)
1 tsp Italian seasoning
1/2 tsp onion powder
1 tsp garlic powder
1/2 tsp dried thyme
1 tsp paprika (regular or smoked)
1/2 tsp dried basil
1/4 tsp pepper flakes (optional)
1/2 tsp dried parsley
1/2 tsp salt
1/4 tsp black pepper
Garnish:
chopped parsley
How to make Baked Chicken Breasts
Brine:
Step 1: To make the brine, fill a large bowl with 1-quart lukewarm water and 1/4 cup salt. Stir well until the salt is completely dissolved. Add the meat and leave it to brine for about 30 minutes. If desired, cover the bowl and keep it in the fridge for up to 6 hours.
Step 2: Take the meat out of the brine and rinse under cold water. Pat the meat dry with paper towels.
Chicken and Seasoning:
Step 3: Prepare the oven. Preheat it to 400 degrees F. Using a couple of tbsp olive oil, lightly grease a 9 x 13-inch baking dish.
Step 4: Combine the salt, pepper, Italian seasoning, garlic powder, onion powder, paprika, dried thyme, dried basil, dried parsley, and pepper flakes in a small bowl.
Step 5: With oil, rub the chicken breasts. You can also use melted butter instead of oil. Season all sides of the chicken breasts, rubbing them well so the breasts absorb the seasoning well.
Step 6: To the prepared baking dish, add the chicken. Place in the preheated oven and bake for about 25 to 30 minutes or until the internal temperature reached 165 degrees F.
Step 7: Remove from the oven when done and allow the chicken breasts to rest for about 5 to 10 minutes before slicing.
