Baked Cauli-Tots

Prep time: 15 mins | Cook time: 25 mins | Total time: 40 mins | Yields: 4 servings, 6 tots each (makes 24 tots)

These kid-approved cheesy and crispy cauliflower tots are my children’s new favourite vegetable side dish. Made with only a few simple ingredients and ready in less than an hour, your kids will surely adore these, too! This easy veggie-packed and gluten-free recipe are one to keep. A must-try and perfect for your picky eaters.

If you are struggling to make your kids eat healthily, these baked cauli-tots might do the trick. Perfectly crispy, cheesy tots with a potato-ey little nuggets vibe even without the taters! These delicious finger food will impress even the finicky eaters!

Ingredients

3 c. shredded cauliflower (about half of a head)

4 ounces shredded sharp cheddar cheese (about 1 c.)

1 Egg

1/4 c. cornmeal or bread crumbs or ground oats also work

1 tsp kosher salt

a few grinds black pepper

1/2 tsp ground mustard

How to make Baked Cauli-Tots

Step 1: Prepare the oven. Preheat it to 400 degrees F. Using oil or cooking spray, grease a mini muffin tin.

Step 2: In a kitchen towel, place the shredded cauliflower, then squeeze out the excess moisture.

Step 3: In a large bowl, place the shredded sharp cheddar cheese, egg, cornmeal, or bread crumbs (ground oats works well, too), kosher salt, black pepper, and ground mustard. Mix well using a fork to combine.

Step 4: Between the prepared muffin cups, divide the mixture with a spoon or scoop, firmly pressing down the mixture into the cups. Place in the preheated oven and bake for about 20 to 25 minutes until golden brown.

Step 5: Remove from the oven when done and let the baked cauli-tots cool slightly. Then, around the edge, run a knife to pop the tots out.

Note:

To shred the cauliflower, use either the shredding attachment for a food processor or a hand grater.
