BAKED CAPRESE CHICKEN

PREP TIME: 5 MINS | COOK TIME: 25 MINS | TOTAL TIME: 30 MINS | SERVINGS: 4 – 6

This is a winner chicken dinner that you can easily make in under thirty minutes! Juicy and moist chicken breasts that are packed with flavour from the sweet balsamic oven-roasted tomatoes and melted mozzarella cheese. It’s a cult favourite and classic go-to. Make sure to not miss this amazing Baked Caprese Chicken. It is insanely good I am pretty sure that everyone will be begging for more!

INGREDIENTS

2 tbsp Olive Oil

3-4 Large Chicken Breasts (or 5-6 thinly sliced chicken breasts)

¾ tsp Dried Basil

¼ tsp Garlic Powder

¾ tsp Dried Oregano

1 ½ c. Fresh Tomatoes such as Campari or Grape, halved or quartered

2 tbsp Brown Sugar

3 tbsp Balsamic Vinegar

⅓ c. Red Onion diced

1 ½ c. Grated Mozzarella Cheese or 4 – 8 Slices Fresh Mozzarella

1 tsp Salt

½ tsp Pepper

Garnish optional:

Fresh Italian Parsley or Basil diced

HOW TO MAKE BAKED CAPRESE CHICKEN

Step 1: Prepare the oven. Preheat it to 425 degrees.

Step 2: In a baking dish or cast-iron skillet, place the chicken breast. Drizzle with olive oil and sprinkle with basil, oregano, garlic powder, salt, and pepper.

Step 3: All around the chicken, place the halved tomatoes and diced onion. Then, sprinkle with balsamic vinegar and brown sugar.

Step 4: Place in the preheated oven and bake for about 18 to 24 minutes. Note that the cooking time of the chicken varies depending on the thickness of the chicken breast.

Step 5: Remove the chicken from the oven when done and sprinkle with mozzarella cheese.

Step 6: Return the skillet/baking pan to the oven on the top rack and broil for about 5 minutes or until the cheese has melted.

Step 7: Before serving, garnish with fresh basil or Italian parsley, then drizzle with balsamic sauce and place the potatoes all over the chicken. Enjoy!
