Baking sweet potatoes are as easy as eating them. Simply wrap the potatoes tightly in aluminium foil and pop in the oven. You can even do this ahead of time if you are meal prepping for an easy, quick, and healthy vegetarian, Whole30, and Paleo side.
If sweet potatoes are a staple at your house, this recipe is perfect! Compare to boiling sweet potatoes, baking them in the oven is perfect for when you have to cook more potatoes in one batch. And oven-baked sweet potatoes have a superbly crisp exterior which we cannot achieve in an Instant Pot.
Ingredients
1.5 pounds sweet potatoes about 4 medium-sized potatoes
2 tablespoons olive oil optional
1 teaspoon salt optional
½ teaspoon pepper optional
How to make Bake Sweet Potatoes
Step 1: Prepare the oven. Preheat it to 400 degrees.
Step 2: To remove any excess dirt, rinse and scrub the potatoes.
Step 3: Using a large fork, poke holes on the entire potatoes.
Step 4: Drizzle the potatoes with olive oil and if desired, sprinkle with salt and pepper.
Step 5: In a large piece of aluminium foil, wrap the potatoes. Ensure that the potatoes are wrap in foil at least twice. To make sure that the juice will not escape, secure the ends of the packet.
Step 6: On a large baking sheet, transfer the wrapped potatoes.
Step 7: Place in the preheated oven and bake for about 45 to 60 minutes until the potatoes are cooked all the way through.
Step 8: Remove the baked potatoes from the oven and enjoy with BBQ chicken or Mexican taco toppings.
