Bacon BBQ Chicken Bombs

Prep time: 15 mins | Cook time: 30 mins | Total time: 45 mins | Serves: 10

Ready your taste buds because this Bacon BBQ Chicken bombs will blow them away! Chicken, cheese, bbq sauce, bacon, and jalapeno? Who can say no?

Ingredients

5 boneless skinless chicken breasts or 10 fillets

5 jalapenos, de-seeded, sliced in half lengthwise

4 oz cream cheese, softened

1 c. cheddar cheese, shredded

salt and pepper to taste

20 slices bacon

1 c. barbecue sauce

How to make Bacon BBQ Chicken Bombs

Step 1: Slice the chicken breasts lengthwise to make thin fillets.

Step 2: Place the chicken fillets between parchment paper and pound to about 1/4 inches thin.

Step 3: With salt and pepper, season each fillet.

Step 4: Wash, remove the stems and slice the jalapenos lengthwise. Remove the seeds, clean the centre, and wash the jalapenos one more time.

Step 5: Combine the cream cheese and cheddar cheese in a mixing bowl until well mixed.

Step 6: With around a tbsp or little amount of cheese, fill the jalapeno halves.

Step 7: Transfer cheese side-down the filled jalapenos on the chicken fillets. Then, roll the chicken around the jalapeno.

Step 8: Tightly wrap the rolled chicken/jalapeno with 2 pieces of bacon. Starting at one end, roll a piece of bacon on the fillet and finish with the second piece of bacon. Seal the ends by tucking the bacon into itself.

GRILL:

Step 1: Ready the grill. Preheat it to 350 degrees.

Step 2: On the preheated grill, place the chicken bombs and cook for about 25 to 30 minutes, turning the chicken bomb every 5 minutes to ensure that both sides cook evenly.

Step 3: Baste the chicken bomb for the last time just before they are done.

Step 4: The chicken bomb is ready when the internal temperature reads 165 degrees F. Check using a meat thermometer. Alternately, pierce the chicken bomb with a fork.

Step 5: Once done, remove the chicken bomb from the grill and allow them to rest for at least 5 minutes before serving. Enjoy!

OVEN:

Step 1: Prepare the oven. Preheat it to 400 degrees.

Step 2: On a foil-lined baking sheet, place the chicken bombs.

Step 3: Place inside the preheated oven and bake for about 20 minutes. To help cook the bacon, turn the chicken bomb once.

Step 4: Adjust the heat to 375 degrees and line a different baking sheet or pan. Transfer the chicken bomb to the new prepared dish.

Step 5: With barbecue sauce, brush each chicken bomb. Flip the chicken bomb using a spatula and brush the tops with extra sauce.

Step 6: Bake for another 5 to 6 minutes.

Step 7: Take the chicken bomb from the oven and brush them with more sauce.

Step 8: Broil for several minutes to crisp the bacon and until the chicken is completely cooked through.

Step 9: Before serving, allow the chicken bomb to sit for at least 10 minutes. Slice into half to an inch. Enjoy!
