Ingredients
1 Smithfield Applewood Smoked Bacon seasoned pork tenderloin
5 large thin slices of apple, cut into half-moons
8 slices Smithfield Hometown Original Bacon
3 tsp extra virgin olive oil
How to make Bacon and Apple Wrapped Pork Tenderloin
Step 1: Prepare the oven. Preheat it to 425 degrees.
Step 2: Remove the silvery-white connective tissue running along the top of the pork tenderloin using a sharp knife. Along the top of the loin, place the slices of apple, slightly overlapping of needed. Around the tenderloin, wrap the strips of bacon, closing with the seam side down.
Step 3: On medium-high, heat a large ovenproof skillet. Add the oil and swirl it to coat the bottom of the pan. Add the pork and cook for about 4 minutes. Flip the pork, then place the pan in the preheated oven. Bake the pork for about 15 minutes until the internal temperature reached 145 degrees.
Step 4: When done, remove the pan from the oven and place the pork on a cutting board to rest for at least 5 minutes.
Step 5: Slice the pork and split it onto plates. Drizzle the slices with some of the pan juices. Or, if desired, add a dollop of warmed apple sauce on top. Enjoy!
