AVOCADO TOMATO SALAD

Salads are the easiest, most convenient, and quickest to prepare. They are super versatile because you can add just about anything. This Avocado Tomato Salad has been one of my go-to, especially during summer. Made with simple ingredients with a few steps, you can be able to throw this together in a snap. And this has a unique and flavorful dressing which I love so much!

A fresh, refreshing salad with slices of tomato, avocado, cucumber tossed in a light and delicious dressing. Perfect to pair with any meal as a side dish or enjoy this on its own. Super good even my pickiest eaters love this! Enjoy this nice salad under the summer heat or all year round!

Ingredients

1 Large Cucumber halved lengthways and sliced

4 Vine-ripened tomatoes cut into wedges

½ Red onion sliced thinly

1-2 large Avocados diced

DRESSING:

1/4 c Red wine vinegar

1 teaspoon Lemon juice freshly squeezed if possible

1 teaspoon garlic minced

1/4 teaspoon Granulated sugar

1 teaspoon Dijon mustard

1 ½ teaspoon Dried oregano

1/4 c Extra-virgin olive oil

HOW TO MAKE AVOCADO TOMATO SALAD

Step 1: In a small mixing bowl, add the dressing ingredients; red wine vinegar, lemon juice, minced garlic, granulated sugar, Dijon mustard, dried oregano, and extra virgin olive oil. Mix well until incorporated. Set aside.

Step 2: In a large bowl, place the cucumber, tomatoes, and avocado.

Step 3: Add the dressing into the large bowl and toss to coat.

Ingredients
