This Avocado Tomato Salad has been one of my go-to, especially during summer. Made with simple ingredients with a few steps, you can be able to throw this together in a snap. And this has a unique and flavorful dressing which I love so much!
A fresh, refreshing salad with slices of tomato, avocado, cucumber tossed in a light and delicious dressing. Perfect to pair with any meal as a side dish or enjoy this on its own. Super good even my pickiest eaters love this! Enjoy this nice salad under the summer heat or all year round!

Ingredients
1 Large Cucumber halved lengthways and sliced
4 Vine-ripened tomatoes cut into wedges
½ Red onion sliced thinly
1-2 large Avocados diced
DRESSING:
1/4 c Red wine vinegar
1 teaspoon Lemon juice freshly squeezed if possible
1 teaspoon garlic minced
1/4 teaspoon Granulated sugar
1 teaspoon Dijon mustard
1 ½ teaspoon Dried oregano
1/4 c Extra-virgin olive oil
HOW TO MAKE AVOCADO TOMATO SALAD
Step 1: In a small mixing bowl, add the dressing ingredients; red wine vinegar, lemon juice, minced garlic, granulated sugar, Dijon mustard, dried oregano, and extra virgin olive oil. Mix well until incorporated. Set aside.
Step 2: In a large bowl, place the cucumber, tomatoes, and avocado.
Step 3: Add the dressing into the large bowl and toss to coat.
