Asian salmon and noodles

PREP TIME: 10 MINS | COOK TIME: 30 MINS | TOTAL TIME: 40 MINS | SERVINGS: 4

Whenever I crave an Asian-inspired meal, this recipe is my go-to. Delicious Asian salmon noodles with mushrooms and snow peas tossed in a Sriracha flavoured, honey-sesame sauce. Top it off with a perfectly flavoured and charred salmon for a filling, easy, and quick weeknight meal any time!

Ingredients

Asian noodles:

10 button mushrooms, sliced, or 1 Portobello mushroom, sliced

1 tbsp olive oil

1 tbsp sesame seeds

5 green onions chopped

¼ c. soy sauce

½ pound pasta preferably Fettuccine (half a pound)

¼ c. chicken stock

¼ c. honey

2 tbsp sesame oil

2 c. snow peas end trimmed (about 60 snow peas)

1 tsp Sriracha sauce, substitute with any other hot sauce if you don’t have Sriracha

Asian salmon:

1 lb salmon

1 tbsp honey

2 tbsp cooking oil

1 tbsp soy sauce

salt & pepper

How to make Asian salmon and noodles

Asian Noodles:

Step 1: In a large frying pan, heat the cooking oil over medium heat. To the hot oil, add the chopped green onions and sesame seeds. Cook for about 2 to 3 minutes, stirring often. Then, add the mushrooms and continue to cook for another 2 minutes. Take the pan off the heat when done, then add the soy sauce, honey, chicken stock, sesame oil, Sriracha. Stir well.

Step 2: Boil the snow peas in a different pan for about 3 to 5 minutes or until tender but still crunchy. Drain when done.

Step 3: Cook the pasta following the package directions in a large pan with salted boiling water until al dente. Drain the pasta when done.

Step 4: To the vegetables and sauce, add the drained snow peas and pasta. Stir well and cook over medium-low heat until heated through.

Asian salmon:

Step 5: Prepare the broiler. Preheat it.

Step 6: To the hot large skillet over high heat, add the oil. In the meantime, season the salmon generously with salt and pepper on the non-skin side. Add the salmon to the hot skillet, skin-side up, and sear for about 4 minutes. Mover the salmon around the pan to ensure the oil coats the surface of the fish and it does not stick while searing.

Step 7: Flip the fish after 4 minutes and sear the other side for 2 minutes more over high heat. If you do not like to eat the skin, you can remove it easily after searing the salmon.

Step 8: Combine the honey and soy sauce. Slightly heat the mixture in the microwave or on the stovetop to soften the honey. Brush the salmon with this, then broil for about 3 minutes. Midway through broiling, brush the salmon with more sauce if desired. Broil the salmon until the top is slightly charred.

Step 9: Serve the salmon right away or keep them covered until ready to serve.
