Step 1: With the Cajun seasoning and brown sugar mixture, rub the pork tenderloin, then wrap it up with bacon.
Step 2: Over medium heat, heat an oven-safe skillet. Once hot, add the bacon-wrapped pork tenderloin and cook for about 10 to 15 minutes until all sides are brown.
Step 3: Into a preheated 400 degrees F or 200 degrees C oven, place the pan and roast for about 10 to 15 minutes until the internal temperature of the pork reaches 140 degrees F. Near the end of cooking time, brush the pork with the apricot preserves and mustard mixture.
