6 strips bacon
1 1/2 lbs pork tenderloin
2 tbsp brown sugar
1 tbsp Cajun seasoning
1 tbsp grainy Dijon mustard
3 tbsp apricot preserves
How to make Apricot Glazed Bacon Wrapped Cajun Pork Tenderloin
Step 1: Combine the Cajun seasoning and brown sugar. Sprinkle this over the pork tenderloin and rub to coat. Then, wrap the pork tenderloin in bacon.
Step 2: Add the bacon-wrapped pork tenderloin in a hot oven-safe skillet and cook for about 10 to 15 minutes over medium heat until all sides are browned.
Step 3: Shift the pan to a preheated 200 degrees C or 400 degrees F oven. Roast the pork for about 10 to 15 minutes or until the internal temperature of the pork reached 140 degrees F. Near the end of cooking, brush the bacon-wrapped pork tenderloin with the apricot preserves and mustard mixture. Set aside to rest for about 5 minutes, covered.
