Apple Streusel Bread

by Rebecca August 19, 2021

Prep Time: 25 mins | Cook Time: 60 mins | Total Time: 1 hr 25 mins | Yield: 1 loaf

I am excited about Apple season, and this recipe is the dessert recipe to welcome one of my most fave times of the year! Perfectly sweet cake-like bread with layers of apple chunks and walnuts topped with a fantastic cinnamon streusel. A must-try!

INGREDIENTS

Butter and flour to prepare a 9×5” loaf pan

½ c. plus 1 tbsp brown sugar, divided

1 tsp cinnamon

½ tsp freshly grated nutmeg

2 apples, peeled, cored, and diced (we used Braeburn)

1 tbsp plus 2/3 c. granulated sugar, divided

1 tsp apple pie spice

½ c. walnuts, chopped small

½ c. butter (8 tbsp)

2 Eggs

1½ tsp vanilla extract

1½ c. all-purpose flour

2 tsp baking powder

¼ tsp baking soda

½ c. sour cream

Glaze:

¼ c. brown sugar

1 tbsp butter

2 tbsp heavy cream

2 tbsp confectioners’ sugar

How to make Apple Streusel Bread

Step 1: Prepare the oven. Preheat it to 350 degrees F. And grease a 9 x 5-inch loaf pan, then flour. Set aside.

Step 2: Combine a half cup of brown sugar, cinnamon, and nutmeg in a small bowl. Set aside.

Step 3: Toss the apples with a tbsp of each brown sugar and granulated sugar, apple pie spice, and walnuts in a medium bowl. Set aside.

Step 4: Cream the butter in a bowl of a stand mixer with a paddle attachment. Add the granulated sugar and continue to beat for a minute more until light and fluffy.

Step 5: Add the egg a piece at a time with the mixer running, scraping the bowl, and mixing every after each addition for a minute on medium speed until slightly pale. Then, add the vanilla and whisk until incorporated.

Step 6: Whisk the flour, baking powder, and baking soda in a small bowl.

Step 7: Add the flour mixture alternately with the sour cream while the mixer is still running until just mixed. Make sure not to over mix.

Step 8: Into the prepared pan, pour half of the batter, spreading to the sides. Add the apple mixture, patting and poking the apples down the batter. On top, sprinkle the sugar mixture. Do the same with the remaining batter, apples, and sugar mixture. Then, sprinkle over the remaining sugar mixture.

Step 9: Place in the middle rack position in the preheated oven and bake for about 50 to 60 minutes until a toothpick inserted in the middle of the bread comes out clean.

Step 10: Meanwhile, to make the glaze, whisk the brown sugar, butter, and cream in a small saucepan. Bring to a boil, then simmer for about 2 minutes over medium-low heat without stirring. Take off the heat. While whipping, sift the powdered sugar and let it sit for at least 10 minutes.

Step 11: Remove the oven from the oven and onto a wire rack to cool for at least 15 minutes. After 15 minutes, loosen the sides and flip the bread out of the pan, reverting onto the cooling rack. Over the sheet pan, place the rack.

Step 12: On top of the bread, drizzle the glaze and allow it to melt into the warm cake. Serve warm or cool completely before slicing. Enjoy!
