These Apple Pie Cupcakes are the best bite-sized version of your favourite Apple Pie. Decadent cupcakes topped with either whipped cream, ice cream, or a drizzle of caramel sauce. Excellent for the coming apple season and a delicious treat/dessert all year round!

2 pre-made, ready to roll pie crusts or Homemade All Butter Pie Crust
Apple Filling
2 tbsp unsalted butter
2 large apples, peeled, cored, and diced into 1/4-inch cubes
2 tbsp brown sugar
1/2 tsp ground cinnamon
1/8 tsp salt
2 tbsp lemon juice
Crumble Topping:
2 tbsp unsalted butter
1/3 c. flour
1/3 c. brown sugar
1/3 c. pecan halves, toasted
1/8 tsp salt
1 egg for egg wash
Whipped cream, ice cream, or caramel sauce for topping
How to make Apple Pie Cupcakes
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using cooking spray, lightly grease 24 mini muffin cups.
Step 2: Melt the butter in a medium-sized pan. Add the apples, brown sugar, salt, and cinnamon once the butter has melted. Cook for about 10 to 12 minutes over medium-high heat while often stirring until the apples are tender. Then, stir in the lemon juice. Now, set the pan aside and let the mixture cool.
Step 3: In the meantime, place the flour, brown sugar, and pecans/walnuts in a medium bowl. Combine, then mix in the butter until crumbly.
Step 4: On a floured surface, lay the pie crust and roll with a floured rolling pin. Cut about 12 pieces of approximately 3-inches diameter rounds each pie crust using a round cookie or biscuit cutter. Then, into the prepared mini muffin pan, very carefully press each round, running your fingers on the edge to shape the crust. Now, brush the top edges of each cupcake with egg wash.
Step 5: Onto the pie crust in the muffin cups, evenly divide the apple filling, and top with the crumble topping. Place in the preheated oven and bake for about 15 to 20 minutes until the edges are golden. When done, remove the cupcakes from the oven and onto a cooling rack. After cooling the cupcakes. Loosen the crust using the tip of a knife from the mini muffin cups.
Step 6: Top the cupcakes with whipped cream, ice cream, or a drizzle of caramel sauce before serving. Enjoy!
