My favourite fall dessert. This lovely Apple Enchiladas not only tastes good but smells amazing! Serve this for breakfast, or as a dessert, it doesn’t matter because these enchiladas are perfect no matter what.
Apple pie filling with sprinkles of cinnamon wrapped in tortillas baked in simple buttery sugar syrup. To serve, top with whipped cream, a scoop of ice cream, or a drizzle of heavy cream or alongside ham. Don’t forget to spoon some of the syrup for extra goodness. Crazy delicious, and perfect for everyone!

I made this countless times last fall. My kid favoured this, and I am tempted to make this again and again. Make this with either canned apple pie filling, fresh apples, or a mix of both. No to fussy treats, just enjoy and relax!
Ingredients
21 ounces can apple pie filling
6 8-inches tortillas
1 teaspoon cinnamon
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup water
How to make Apple Enchiladas
Step 1: On the centre of each tortilla, spoon about a heaping quarter cup of pie filling and sprinkle with cinnamon.
Step 2: Roll the tortillas up, tuck the edges, and transfer them into a 9 x 13-inch casserole dish seam side down.
Step 3: Add the butter, white sugar, brown sugar, and water in a medium saucepan. Whisk over medium heat and bring to a boil. Decrease the heat and continue to simmer for about 3 minutes.
Step 4: Pour the sauce over the enchiladas. Let it sit for at least 45 minutes.
Step 5: Place inside the oven. Bake for approximately 20 minutes at 350 degrees or until golden.
Step 6: When done, remove from the oven.
Step 7: Serve warm alongside ham or with vanilla ice cream. Enjoy!
