Roasted Garlic Butter Parmesan Potatoes

Prep Time: 10 mins | Cook Time: 25 mins | Total Time: 35 mins | Yield: 4 Servings

These Roasted Garlic Butter, Parmesan Potatoes are the perfect side dish to serve today! Dinner with your family is going to be amazing, I’m telling you! Try this recipe. Enjoy!

Ingredients:

1/2 c unsalted butter

1/4 c (60ml) olive oil

6 large cloves of garlic, finely chopped or minced

1 tbsp Italian seasoning

3 lbs. (1.5 kg) baby red potatoes, washed and quartered

Fresh chopped parsley, for garnish

3/4 c fresh grated Parmesan cheese

Salt and fresh cracked black pepper

1/2 c crispy bacon bits (optional)

Directions:

Prepare the oven and preheat it to 200 degrees C or 400 degrees F.

Apply cooking spray to a large baking sheet.

Precook the baby red potatoes for about 5 minutes.

Add Parmesan cheese, 1/4 cup olive oil, salt, pepper, garlic, and herbs into a large mixing bowl. Stir everything until well incorporated. Add the precooked potatoes, then toss until fully coated.

Transfer the coated potatoes onto the prepared baking sheet and arrange them in a single layer.

Place the baking sheet in the preheated oven and bake the potatoes for about 25 minutes. Make sure to flip them after 15 minutes to cook the other sides.

Place freshly chopped parsley and butter into a heat-proof bowl, then place it in the microwave. Heat until the butter has melted completely. Stir until well blended.

Drizzle the melted butter on top of the potatoes and scatter the crumbled bacon. Toss everything until well incorporated.

Serve right away. Enjoy!

Notes:

Place any leftovers in an airtight container, then put them in the fridge. Reheat for a few minutes before serving again.

Serve this as a side dish for your favorite protein meals!

You can broil these potatoes for about 4 minutes to slightly toast them.
