A Lemon Cake to Die for!

This lemon cake melts everyone’s hearts! I made this several times during the Holiday because my aunt just can’t get enough of this soft cake with amazing citrus flavour. This is perfect if you love the lemon flavour. This cake is very refreshing, decadent, and to die for!

Easily whip this cake up using a boxed cake mix and instant pudding mix. Make this a night before and keep this cake in the fridge overnight because it tastes even better, gets super moist, rich, and flavour enhances! This cake is excellent to serve for breakfast, snacks, even dessert!

Ingredients

Cake:

4 eggs

1 box of instant lemon pudding mix (3.4 ounces)

1 box of yellow cake mix (15.25 ounces)

3/4 c. oil

3/4 c. water

Soaking syrup:

2 tablespoons unsalted butter, melted

1/3 c. lemon juice

2 tablespoons water

2 c. powdered sugar

How to Make a Lemon Cake

Step 1: Prepare the oven. Preheat it to 350 degrees F. Grease and set aside a 9 x 13-inch baking pan.

Step 2: In a large bowl, beat the eggs using an electric mixer. Then, add the cake mix along with the pudding mix, water, and oil. Mix well until blended.

Step 3: Into the prepared baking pan, pour the cake batter. Place in the preheated oven and bake for about 30 to 35 minutes or until a toothpick inserted in the middle of the cake comes out clean.

Step 4: In the meantime, ready the syrup. Start by whisking the melted butter with lemon juice, water, and powdered sugar in a bowl until well mixed.

Step 5: Remove the cake from the oven when done. Using a skewer or fork, poke holes all over the cake. Over the warm cake, pour the soaking syrup. Before serving, allow the cake to cool completely.

Step 6: Slice and serve. Enjoy!
