This is an amazing cake perfect for any occasion! Super easy to whip and comes together in less than an hour. Make this using only a few ingredients and serve it on your next get-together to impress everybody. Looks dazzling and tastes superb!

Ingredients
Cake:
1 lemon cake mix (I used Duncan Hines 16.5 oz. Lemon Supreme Signature Cake Mix)
1 (3.4 oz.) Jello Instant Lemon Pudding
4 Eggs
1 1/4 c. 7-up or any lemon-lime drink
3/4 c. vegetable oil
Pineapple Filling:
1 (20 oz.) can crushed pineapple, undrained
1 stick butter or margarine or 8 tbsp or 1/2 c.
1 c. sugar
2 Eggs
2 tbsp all-purpose flour
1 1/2 c. coconut
How to make 7-UP Cake
Step 1: In a mixing bowl, place the cake ingredients (lemon cake mix, jello, eggs, 7-UP or other lemon-lime drink, and vegetable oil) and mix using a mixer.
Step 2: Divide the batter into two greased 8-inches cake pans.
Step 3: Place in a preheated 325 degrees oven and bake for about 35 to 40 minutes until a toothpick inserted in the centre of the cake comes out clean. Remove from the oven when done and allow the cake to cool before frosting.
Pineapple Filling:
Step 4: In a saucepan, combine the pineapple, butter, sugar, eggs, and flour. On medium heat, cook the filling until thickens. Let the mixture come to a boil, then turn the heat down, and simmer for about 5 minutes, stirring frequently.
Step 5: Take off the heat, then add the coconut. Allow the filling to cool before spreading it between and over the cooled cake layers.
Note:
Make sure to chill this cake in the fridge before slicing and serving.
