Ingredients
1 can of black beans (drained & rinsed)
1 can of pinto beans (drained & rinsed)
1 can petite diced tomatoes (undrained)
1 can sweet corn (drained)
1 can (12.5 ounces) chicken breast (drained & flaked)
1 can (10 ounces) green enchilada sauce
1 can (14 ounces) low-sodium chicken broth
1 packet taco seasoning
1/2 tsp cumin
1/2 tsp chilli powder
1/2 tsp garlic powder
How to make 7 Can Chicken Taco Soup
Step 1: Into a large soup pot, combine all the ingredients (black beans, pinto beans, diced tomatoes, sweet corn, chicken breast, green enchilada sauce, chicken broth, taco seasoning, cumin, chilli powder, and garlic powder).
Step 2: Bring everything to a boil over medium-high heat. Adjust the heat to low once boiling, then simmer for about 15 minutes, stirring occasionally.
Step 3: Enjoy with some tortilla chips, shredded cheese, sour cream, and avocado.
Notes:
Feel free to use 1 1/2 cups of shredded chicken if desired.
You can use a packet of mild taco seasoning for this recipe.
