5 Ingredient Vegan Vodka Pasta

PREP TIME: 10 MINS | COOK TIME: 15 MINS | TOTAL TIME: 25 MINS | YIELD: 6-ish servings

This is another amazing vegan pasta dish you should try very soon. My favourite – super creamy, tangy, and incredibly delicious! A five-ingredient recipe that anyone can make in less than thirty minutes. Take it easy on vodka, but you can add more if desired! I know I do most of the time because it adds a crazy amazing flavour that everyone around the table loves so much! This Vegan Vodka Pasta is perfect for busy days when you have only a little time left to cook meals and is great for entertaining even on date nights.

INGREDIENTS

1/4 c. olive oil

3 cloves garlic, minced

1 6-oz. can tomato paste

1/4 c. vodka

1 14-oz. can full-fat coconut milk

1 lb rotini (or any pasta, but rotini is my fave!)

a little bit of reserved pasta water

1 tsp salt

season to taste with more salt, black pepper, olive oil, red pepper flakes, garlic salt, etc.

How to make 5 Ingredient Vegan Vodka Pasta

Step 1: On the stove, heat the olive oil over low heat. Saute the garlic into the hot oil until aromatic. Now, stir in the tomato paste and cook further until deep red.

Step 2: Pour in the vodka and allow it to sizzle. Add the coconut milk and season with salt, then allow the mixture to simmer for a few minutes.

Step 3: In the meantime, cook the pasta following the package directions. When done, drain the pasta and add to the sauce. Toss until completely covered. You can add some of the reserved pasta water until you reached your desired consistency.

Step 4: When done, remove from the heat and curl the pasta up and serve. Enjoy!

NOTES:

Keep stirring the garlic and cook over low heat to ensure the garlic won’t burn.

For this recipe, I used whole wheat as I am trying to limit the grains.

Feel free to add more vodka if desired for extra flavour.
