5 Ingredient Ground Beef Enchilada Casserole Recipe

PREP TIME: 10 mins | COOK TIME: 30 mins | TOTAL TIME: 40 mins | SERVES: 6

Grab these pantry ingredients and begin prepping this 5-ingredient casserole. Ready in under an hour, this easy, quick, and oh-so-delicious Ground Beef Enchilada will leave everyone on the dinner table in awe!

Ingredients

1 lb lean ground beef

15 oz enchilada sauce (1 can)

1 c. shredded Mexican cheese blend

8 corn tortillas 6 inch

15 oz black beans rinsed and drained

½ c. tomatoes chopped, optional topping

½ avocado chopped, optional topping

How to make 5 Ingredient Ground Beef Enchilada Casserole

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: With non-stick cooking spray, grease a 9 x 11-inch baking pan.

Step 3: Brown the beef in a large skillet over medium-high heat for about 6 to 9 minutes.

Step 4: Toss the cooked ground beef, half of the enchilada sauce, and half of the cheese in a large bowl.

Step 5: On the bottom of the prepared baking dish, place 4 tortillas. If necessary, rip the tortillas to ensure that the bottom of the pan is completely covered.

Step 6: On top of the tortillas, spread half of the beef mixture, half of the beans, then drizzle with 1/4 cup of the enchilada sauce. Duplicate the layers one more time.

Step 7: Add on top the rest of the shredded cheese. Using foil, cover the pan, pop in the preheated oven, and bake the casserole for about 30 minutes until cooked through.

Step 8: Remove from the oven, top with avocado and tomatoes if desired. Enjoy!

Notes:

Lighten up the dish, use ground turkey instead of ground beef.
