Crack Cake

Have you had the best cake in your life? I assume not yet because what I’m about to share with you today is the best cake ever! Just kidding, it is the best cake for me! I learned how to make this when I was studying abroad. I read a lot of recipe books back then and this was the one recipe that got me. So, years later, I remembered this recipe and gave it a try. Good thing that I did because I never would have eaten such an amazing cake if I hadn’t tried it! Everything you need is included in the ingredients list and set of instructions below. Just follow them carefully to guide you to perfection! Good luck and have fun!

Ingredients

FOR THE CAKE:

1 box Duncan Hines yellow cake mix

¼ cup brown sugar

¼ cup white sugar1 box vanilla pudding instant mix

2 teaspoons of cinnamon

4 eggs

¾ cup of water

¾ cup oil

½ cup white wine (really any kind, but I always use my go-to pinot grigio)

any cake with my favorite ingredient, wine, works for me

FOR THE GLAZE :

1 stick butter

1 cup of sugar

¼ cup white wine

How to make Crack Cake

Step 1: Ready the oven and preheat to 350 degrees.

Step 2: Refer to the package of Duncan Hines yellow cake mix on how to mix the cake.

Step 3: In the same bowl with the cake mix, add brown sugar, white sugar, pudding instant mix, cinnamon, eggs, water, oil, and white wine. Whisk until all the ingredients are well-blended.

Step 4: Transfer the batter into a baking pan.

Step 5: Place the pan inside the oven and bake for 1 hour or until a toothpick comes out clean after pinching the center of the cake.

To make the Glaze:

Step 6:  While the cake is baking, place a skillet on the stove and turn the heat to low. Once hot, add the butter and let it melt then and 1/4 cup of wine.

Step 7: Pour the butter and wine mixture over the cake. Pinch little holes on the cake using a toothpick to let the cake absorb all the liquid mixture.

Step 8: Move the pan into a wire and let it sit to cool.

Step 9: Use a spatula and run it in circles around the cake to loosen the sides.

Step 10: Prepare a serving plate and flip out the pan onto the serving plate.

Step 11: Serve and Enjoy!

CREAMY BURRITO CASSEROLE

I miss girl’s night! My friends and I always find time for each other even if we are very busy people. It is a way for us to get away from all the stress we have to deal with every single day. We find comfort in each other that is why every Saturday night, all gather at my place and talk about our dreams and everything that will cheer us up. No talk of work whatsoever. This dish that I am sharing with you today is our favorite food to eat during girl’s night. It is really simple to make and very delicious. We usually eat this with wine. Oh, it’s perfect! If you happen to have these basic ingredients, you are lucky because you are less than an hour away from greatness! Try this tonight and have friends come over. Enjoy!

INGREDIENTS

1 lb ground beef or 1 lb ground turkey

1⁄2 medium yellow onion, chopped

1 (1 1/4 ounce) package taco seasoning

6 large flour tortillas

1 (16 ounces) can refried beans

2 -3 cups of shredded taco cheese or 2 -3 cups cheddar cheese

1 (10 3/4 ounce) can of cream of mushroom soup

4 ounces sour cream

jarred hot sauce, if desired to spice it up

HOW TO MAKE CREAMY BURRITO CASSEROLE

Step 1: In a skillet, cook the ground meat (or turkey) and onion until browned and translucent. Drain excess oil.

Step 2: Add in the taco seasoning. Then, stir in the refried beans.

Step 3: In a separate bowl, mix the soup and sour cream. Spread half of the mixture in the bottom of a casserole dish.

Step 4: Rip 3 tortillas and lay over the sour cream mixture. Place half of the meat and bean mixture on top and layer sprinkle the cheese over.

Step 5: This is optional. You can drizzle some hot sauce on top of the cheese.

Step 6: Repeat the step and finish off with cheese on top.

Step 7: Place inside the oven and bake at 350 degrees F for about 20 to 30 minutes, covered.

Crock-Pot Chicken Teriyaki

I love chicken with white rice. Specifically, I love this dish with rice! 2 weeks ago, I had my sister over. She visited me after nearly 2 months of us not seeing each other. We talked and talked and talked for hours. Then, she felt hungry. I told her that I had to prepare food because there was no leftover in the fridge. My sister, the chef, by the way, went to the kitchen and looked for recipes. I told her that I had chicken but I was just gonna fry it. She told me to sit down and watch her do her thing so I sat down. She gathered these ingredients from my fridge. I was surprised to even had it! I guess my husband bought it. She was very informative with every move she made. It was like watching your favorite singer writing their songs. I was so impressed by the result. It was indeed the best chicken I have ever had! Before she left hours later, She gave me the recipe. Now, I’ve been cooking this all the time. It became my favorite. A big thanks to my sister! Here you go, guys! I know you’re gonna love it too!

Ingredients

1 pound diced chicken

1/2 cup of teriyaki sauce

1 cup of chicken broth

1/3 cup of brown sugar

3 cloves garlic minced

How to make Crock-Pot Chicken Teriyaki

Step 1: In a large bowl, add teriyaki sauce, chicken broth, garlic cloves, and brown sugar. Stir until all ingredients are well-blended.

Step 2: Add the chicken into the bowl of sauce and coat entirely with the mixture.

Step 3: Transfer the sauce and the chicken mixture into the crock-pot.

Step 4: Turn on the slow cooker and set the time to 4 or 6 hours. Check after 4 hours, if the chicken is not yet cooked, let it cook for another hour or more.

Step 5: Turn off the heat and serve the chicken. Best to eat with steamed or fried rice. By the way, spread the sauce all over the rice. It’s awesome! Enjoy!

Savory Slow-cooked Northern Beans

I wish I could go back to the days when everything was simple. See, I grew up in a not so well-off family but we were very happy. I remember this dish. This is pretty much what we ate all the time. My mom’s cooking skill is superb! She could make a simple dish into a somewhat sophisticated looking food. Every dinner we gather to eat this delicious meal. It was so amazing how a simple dish could make too many memories. As the years went by, I added more ingredients to it to make it more awesome. It was perfect before but I thought I could make a bit of modification. Feel free to add your preferred ingredients. I highly encourage you to do so because we all want to eat something that suits our taste, right?

So, here you go friends! Just follow these 7 simple steps and you are good to go! This will always have a special place in my heart. I hope it finds its way to yours too!

Ingredients

1 large onion, chopped

1 tablespoon olive oil

6 clove garlic, chopped

2 lb dry northern beans

4 cups of water

4 cups chicken broth or stock

1 teaspoon chicken bouillon paste optional, it adds flavor

1 cup baby carrots

Salt and pepper to taste

1 tablespoon herbes de Provence

1 meaty ham bone or a couple of meaty ham hocks

Step 1: Pour oil into the slow cooker.

Step 2: Add in the sliced carrots, garlic, and onions.

Step 3: Add the beans, ham bone, broth, water, and seasonings.

Step 4: Pour the bouillon and stir until all ingredients are well-blended.

Step 5: Turn on the slow cooker and set the time to 6 hours on high.

Step 6: When the beans absorbed most of the liquid ingredients, add more water.

Step 7: Once the beans are tender, turn off the heat and serve. Enjoy!
