I love the wonderful flavours of this easy and quick skillet meal! It is packed with scrumptious chunks of Italian sausage with tomato garlic sauce, onion, red peppers, penne pasta, basil, and Parmesan cheese. This sausage pasta skillet is the definition of a perfectly comforting meal!

1 pound (450 grams) penne pasta
1 package Italian sausage, 5 or 6 sausages total
1 red bell pepper, sliced
4 cloves garlic, minced
1 small red onion, sliced
4 large ripe tomatoes, diced
1/2 c. (125ml) vegetable or chicken broth
2 tbsp crushed tomato
1 tsp Italian seasoning
1/2 tsp crushed chilli pepper
2 tsp fennel seeds, crushed in a mortar
Fresh chopped basil, for garnish
1 scallion, sliced, for garnish
Salt and fresh cracked pepper to taste
How to make 20-Minute Sausage Pasta Skillet
Step 1: Following the package directions, cook the pasta until al dente. Drain when done and set aside.
Step 2: In a large skillet, heat a little olive oil over medium heat. Once the oil is hot, add the sausages and cook until both sides are browned. So the sausage doesn’t stick to the pan and blacken, add 1/4 cup or 60 ml water. Place the sausage on a cutting board once almost cooked.
Step 3: Drain the water from the skillet, leaving only the brown bits. Add 1 tbsp oil, onions, crushed fennel seeds, crushed chilli pepper flakes, and Italian seasoning. Saute, then add the garlic and ground tomato. Saute for a few minutes more before adding in the bell pepper and diced tomatoes. Continue to cook until the veggies are crisp-tender. Pour in the broth, stir, and cook for an additional minute or so. To taste, season with salt and pepper.
Step 4: Into 1/4 to 1/2 inch pieces, slice the sausage. Add them back to the skillet and cook for another 5 to 10 minutes or until cooked through and the sauce has thickened.
Step 5: To the skillet, add the pasta and reheat for a few minutes, stirring gently to coat the pasta. Before serving, garnish with basil, chopped scallion, and Parmesan cheese. Enjoy!
