The simple peanut butter sauce is made with soy sauce, spicy sauce, garlic, sesame oil, water, and peanut butter, and tossed in gluten-free soft rice noodles. Do not forget to garnish with some sesame seeds, crunchy crushed toasted peanuts, or spring onions before serving. INGREDIENTS
RICE NOODLES:
salt (optional)
150 g. rice noodles (or use any kind of noodles)
PEANUT BUTTER SAUCE:
1 tablespoon light soy sauce
2 small cloves of garlic
1 tablespoon sriracha (or any spicy sauce) – use only 1/2 tablespoon if you don’t want it very spicy)
4 tablespoons peanut butter (crunchy or creamy, you choose)
1 tablespoon honey (or maple syrup or 1/2 tablespoon sugar)
1/2 tablespoon lemon juice
1/2 tablespoon sesame oil (optional, but recommended)
5 tablespoons water
OPTIONAL TOPPINGS:
crushed peanuts
sesame seeds
spring onions
HOW TO MAKE 10 MINUTE PEANUT SAUCE RICE NOODLES
Step 1: Following the package directions, cook the rice noodles.
Step 2: In the meantime, place the sauce ingredients (light soy sauce, garlic, sriracha, peanut butter, honey, lemon juice, sesame oil, and water) in a blender. Process until you have a smooth sauce.
Step 3: Over the cooked noodles, pour the peanut sauce and toss. Cook for another minute or two over medium heat if you want it hot or serve at room temperature. If needed, add more water. Ladle the noodles to serving bowls and garnish with some sesame seeds or spring onions. Enjoy!
