10 Minute Easy Asian Cucumber Salad Recipe

Nothing is simpler than this easy Asian Cucumber Salad. Ready in under ten minutes, this quick salad recipe with crunchy cucumber, onion, rice wine vinegar, and a few pantry ingredients, you sure to hit everyone’s heart!

Let me tell you a story about how this Pandemic strikes me helpless but pulled me up stronger. Some things happened that affected me in every way possible. My favourite part was when I woke up one day and found myself. I started a gardening project which is a success. I set up a mini sanctuary on my roof, and there I found my happiness. There is just something about it that relaxes me. Cooking is my second love, and I enjoy picking what I need from my garden like the Asian cucumber, onions, and pepper that I use to make this refreshing salad.

Ingredients

4 c of very thinly sliced seedless cucumbers (or use mini cucumbers)

1/4 c of finely sliced red onion

1/4 c of fined diced red pepper

1/4 c of rice wine vinegar

1 tsp of honey

1 tsp of sesame seeds

1/2 tsp toasted sesame oil

1/4 tsp of red pepper flakes

1/4 tsp of sea salt

How to make 10 Minute Easy Asian Cucumber Salad

Step 1: In a medium-sized bowl, place the very thinly sliced cucumber, sliced red onion, diced red pepper, and sesame seeds. Then, set aside.

Step 2: Combine the rice wine vinegar, honey, toasted sesame oil, red pepper flakes, and sea salt in a small bowl.

Step 3: To the cucumber bowl, add in the dressing and toss to combine.

Step 4: Place in the fridge to sit for an hour or two, covered. Or serve immediately.
