1 bag of tortilla chips
1 pound ground beef (or shredded chicken)
3 c. of shredded cheese
4 ounces can of diced green chillies (drained)
1 large can (28 ounces) of red enchilada sauce
1/2 c. of salsa
1 teaspoon ground cumin
How to make Tortilla Chip Enchiladas
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Cook the ground beef until no longer pink. Drain the excess grease when done.
Step 3: To the ground beef, add the diced green chillies, salsa, and cumin. Mix well until combined.
Step 4: To a large mixing bowl, pour the bag of tortilla chips, gently breaking the chips a bit.
Step 5: Over the chips, add the beef mixture and pour 1 cup of the enchilada sauce. Next, add 1 cup of cheese. Gently mix.
Step 6: Into a greased baking dish, pour the tortilla chip enchilada mixture and sprinkle with the rest of the 2 cups of shredded cheese, covering the entire enchiladas completely.
Step 7: Tent with foil and place in the preheated oven. Bake the enchiladas for about 50 minutes.
Step 8: Serve and enjoy!
