Tomato and Vidalia Onion Pie

I always love Vidalia Onion. My mom introduced me to everything onion, and I particularly enjoy Vidalia Onion. I love it as a side dish or over my hamburgers and steaks. And to turn it into a pie is such an amazing treat!

All you need to make this easy recipe is a few simple ingredients. Throw in your Vidalia Onion ingredients with some addition like tomatoes, and you are almost there! This is perfect if you are looking for another way to serve your onions or treat your vegetarian friends to a tasty meal. I already brought this Tomato and Vidalia Onion Pie to so many potlucks, and everyone just can’t get enough of it!

Ingredients

1 tablespoon olive oil

1 large Vidalia Onion, sliced thin

2 large tomatoes, sliced thin

2 tablespoons fresh basil, chopped

1/2 c. grated Parmesan

1 c. grated cheddar or mozzarella cheese

1/3 c. mayonnaise

1 pie crust – from scratch or store-bought

1-2 teaspoons salt and pepper

How to make Tomato and Vidalia Onion Pie

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: After slicing the tomatoes, lay the pieces on a cutting board with a paper towel and sprinkle the tomatoes with salt. Grab more paper towels and tent the tomatoes. Let them dry for about 15 minutes.

Step 3: In a bowl, place the mayonnaise, grated Parmesan, and grated cheddar or mozzarella cheese. Mix well until combined and set aside.

Step 4: In the pie crust, layer the tomato and Vidalia Onion slices in alternating layers. Then, sprinkle with pepper and drizzle with olive oil. On top of the vegetables, sprinkle the chopped basil and spread the cheese/mayo mix. Lastly, sprinkle with more basil.

Step 5: Place in the preheated oven and bake for about 40 to 45 minutes or until golden brown.

Step 6: Remove from the oven when done. Slice the pie and serve. Enjoy!
