The Best Scrambled Egg Toast

Make your morning better with this filling, easy-to-make Scrambled Egg Toast. The best breakfast with a cup of hot coffee to jump-start your day. Use whatever bread you like or available. And don’t be shy with the filling. This recipe is pretty versatile. You can add a slice of mozzarella for that cheesy goodness, even some tomatoes or roasted pepper. This incredibly delicious egg toast will make your everyday breakfast special.

INGREDIENTS

2 slices bread (I use white, sourdough bread)

½ tablespoon butter, plus more to butter the bread

2 Eggs

⅓ c. good quality feta cheese crumbles

chopped parsley or dill to garnish

How to make The Best Scrambled Egg Toast

Step 1: On both sides of the bread, spread a thin layer of the softened butter. Fry each side of the bread for about 2 minutes over medium heat until the crust is golden.

Step 2: Take the bread out of the frying pan and set it aside for now. In the now-empty pan, add half tbs butter. Add in the eggs and feta cheese and cook for approximately 3 to 4 minutes while stirring often until the eggs are cooked through.

Step 3: Between the slices of bread, divide the eggs and sprinkle with the freshly chopped dill or parsley. Serve with a cup of coffee. Enjoy!

NOTES:

For this recipe, you can use any of your favourite bread such as white, wheat, whole grain, rye, or pumpernickel. Use croissant if you are feeling fancy.

You can find quality cheese from your local Bulgarian store. I suggest buying sheep’s feta cheese sold in bricks.

Feel free to customize this Egg Toast. Add a slice of mozzarella to the bread before the egg. If desired, you can add some tomatoes or roasted peppers to the eggs. And a slice of avocado on top!
