1/2 lb ground chuck
1/2 c. diced onion
1/2 tbsp minced garlic
1/2 tbsp chilli powder
1 tsp ground cumin
1/2 tsp paprika
1/2 to 1 tsp kosher salt
1/2 tsp freshly ground black pepper
1/2 (16 oz.) can of refried beans
2 (10”) flour tortillas
1/2 c. salsa
1 c. shredded Mexican Cheese Blend
1/2 c. freshly diced tomatoes
1/4 c. chopped green onions
1 to 2 tbsp finely diced jalapeno peppers
Chopped cilantro for garnish
Sour cream

HOW TO MAKE TACO PIE
Step 1: Prepare the oven. Preheat it to 375 degrees F. And using cooking spray, grease a 9-inch pie plate.
Step 2: Add the half-pound ground chuck to a hot skillet and cook over medium-high heat until brown. With half tbsp chilli powder, a tsp ground cumin, half tsp each paprika, kosher salt, and freshly ground black pepper, season the beef. Add half cup diced onions along with half tbsp freshly minced garlic and cook everything until the meat has browned and the fat has been absorbed.
Step 3: In the pie plate, place one 10-inch tortilla to cover the bottom of the pie plate and top with 8-ounces refried beans. Evenly spread the refried beans across to cover the tortilla.
Step 4: Over the beans, evenly spread the meat mixture. Add another layer of tortilla on top, pressing it gently around the sides. Place in the preheated oven and bake approximately 10 to 15 minutes until lightly brown.
Step 5: Take the dish out of the oven, then over the tortilla, evenly spread half cup of salsa. Sprinkle the 1 cup of shredded cheese on top. Over the cheese, evenly spread the diced tomatoes, then top with 1/4 cup chopped green onions and 2 tbsp finely diced jalapeno peppers. Return to the oven and continue baking for 5 minutes more until the cheese has melted.
Step 6: When done, remove the dish from the oven and let it cool. Before serving, garnish with some freshly chopped cilantro. Enjoy with sour cream and Simple Guacamole!
NOTES:
Easily double the recipe by doubling the ingredients and dividing them between two pie plates.
This dish freezes well. Cool completely, then cover tightly, and freeze!
