Yield: two (2) ample-sized pies
Today, I want to share my mom’s favourite pie. It’s the same pie my grandmother used to make. My mom got this exact recipe from her. It’s a very personal recipe. I grew up watching my mom create the most amazing meals. She never fails to impress us with her wits and talent. I learned everything I know now from my very beautiful mom. Before I went to boarding school, she entrusted me with my grandma’s sweet potato pie recipe. She knows how much I love this pie, too. Now that I have a family of my own, I intend to keep the tradition of passing this recipe to the next generation. If you have not had a sweet potato pie before, you have to try this very soon! It is incredibly amazing, and the best part is, this is easy to whip up. The ingredients are simple to find. You might already have them in your pantry.

2 sticks of salted butter (softened)
2 teaspoons nutmeg
2 ½ lbs of sweet potatoes
4 Eggs (room temperature)
1- 5 ounces can of evaporated milk (the small can)
2 teaspoons cinnamon
2 tablespoons of vanilla extract
2 c. of granulated sugar (swap one cup with brown sugar for added flavour)
2 frozen deep-dish pie crusts
How to make Sweet Potato Pie
Step 1: Start by baking or steaming the sweet potatoes until super soft. When done, remove the skin.
Step 2: In a stand mixer, add the sweet potatoes and the remaining ingredients. Blend until smooth. Into the pie crust, divide and pour the mixture.
Step 3: Place the pie crust in 350 degrees preheated oven and bake for about 60 minutes. You can bake longer to brown the crust.
Step 4: Remove from the oven when done and allow the pie to cool before serving.
