STRAWBERRY POUND CAKE

Easily and quickly make this one-bowl famous Strawberry Pound Cake. My ultimate favourite summer dessert – delicious, moist, and packed with strawberry. Nothing can ever satisfy my sweet tooth other than a big slice of this fruity with a perfectly sweet glaze cake!

We can never have enough sweets at home. My kids, me, and my husband, all love dessert. It is the highlight of our every meal. We are crazy about this strawberry pound cake apart from our usual favourite chocolate/peanut butter cake. It’s heavenly and whips up in minutes in just one bowl.

INGREDIENTS

1 1/2 c. all-purpose flour

2 tsp baking powder

1/2 tsp salt

1 c. plain Greek yoghurt

1 c. sugar

3 large Eggs

1 1/2 tsp almond extract

1/2 c. vegetable oil

1 c. diced strawberries about 1 1/4 c. whole

Glaze:

1/2 c. smashed strawberries about 1 c. whole

2 c. powdered sugar

HOW TO MAKE STRAWBERRY POUND CAKE

Step 1: Prepare the oven. Preheat it to 350 degrees F. And using a non-stick cooking spray, grease an 8 or 9-inch loaf pan. Set aside.

Step 2: Place the flour, baking powder, and salt in a medium-sized bowl. Stir to combine.

Step 3: Add the Greek yoghurt, sugar, eggs, extract, and oil to another large mixing bowl and mix. Gradually stir in the dry ingredients until just combined. Then, fold in the strawberries.

Step 4: Into the prepared pan, transfer the batter. Place in the preheated oven and bake for about 50 minutes until the centre of the cake is set. When done, remove from the oven and allow the cake to sit for at least 10 minutes before turning out onto a cooling rack to cool completely.

Step 5: Meanwhile, combine the smashed strawberries and powdered sugar in a medium-sized bowl to make the glaze.

Step 6: Pout the glaze on top of the cooled cake. Let the glaze set before slicing the cake. Enjoy!
