4 thick, bone-in pork chops
Kosher salt
Freshly ground pepper
1 cup all-purpose flour
2 teaspoons garlic powder
1/4 teaspoon chilli powder
1/4 cup plus 3 tbsp vegetable or canola oil, divided
2 medium yellow onions, thinly sliced
2 tablespoons butter
1 1/2 cups low-sodium chicken broth
1/4 cups heavy cream
Chopped fresh parsley, for garnish
How to make Smothered Pork Chops
Step 1: With salt and pepper, season the entire pork chops.
Step 2: Combine the flour with garlic powder and chilli powder in a shallow dish. Dip the flour into this mixture and coat. Shake the excess. Set aside 2 tbsp seasoned flour.
Step 3: Heat 1/4 cup oil in a large, heavy skillet over medium heat. Once the oil is shimmering, sear the pork chops in batches for about 4 to 5 minutes on each side. To a plate, transfer the cooked chops, then wipe the skillet clean.
Step 4: Adjust the heat to medium-low. Pour the rest of the oil into the same skillet and add in the onions. Season with a generous amount of salt and pepper, then cook the onions for about 15 to 20 minutes until very soft and slightly caramelized. Add in the butter and allow it to melt. Sprinkle in the reserved flour and continue to cook for another minute until the flour is no longer raw. Add in the chicken broth and heavy cream, stir, and simmer for about 5 minutes until the sauce has thickened.
Step 5: Add the pork chops back to the skillet and cook for 10 minutes until the pork is cooked through.
Step 6: Before serving, garnish with parsley. Enjoy immediately.
