Slow Cooker Creamy Tomato Basil Chicken

This is one of my favourite slow cooker recipes. This creamy tomato basil chicken is always a big hit and one of the best chicken meals you’ll ever make! This easy recipe requires only a few simple ingredients and takes only five minutes to prep. Add everything in your slow cooker and leave. Dinner is ready before you knew it.

If you need another easy recipe to save you on your busy schedule, then this is a must! Tender and juicy chicken breasts smothered in a winner creamy tomato basil. Serve this over a plate of spaghetti or enjoy this incredible dish on its own. As for me, I love it with a simple side salad.

Ingredients

4 boneless skinless chicken breasts

3/4 c. evaporated milk or heavy cream

3/4 c. tomato pasta sauce

2 tbsp corn starch

1 tsp salt

1/2 tsp dried basil

2 tsp minced garlic

14 ounces can diced tomatoes with Italian herbs

2 tbsp finely chopped fresh basil

1/4 tsp black pepper

How to make Slow Cooker Creamy Tomato Basil Chicken

Step 1: To a 3-6-quart slow cooker, add the tomatoes and pasta sauce. Mix the cream and cornstarch until well blended, then add this to the slow cooker. Next, add the garlic, salt, basil, and pepper. Stir well. Lastly, add the chicken breast, pressing them down into the sauce.

Step 2: Set to cook for 3 to 5 hours on low until the internal temperature of the chicken reached 165 degrees F.

Step 3: Remove the cover, then stir in the fresh basil.

Step 4: Serve the creamy tomato basil chicken immediately over pasta, rice, or with a salad and veggies. Enjoy!
