Everyone will love squash after eating this amazing dish! This my personal favorite. I love how the squash incorporates well with the rest of the ingredients. For some people who are not fans of squash, this will surely change your mind about this vegetable. If you want, you can add cooked chicken or rice as well. Give a try and enjoy it!

3 lb yellow squash, sliced or diced
1/2 cup diced Vidalia onion, optional
1 can cream of mushroom or chicken soup, 10.5 oz.
1 cup mayonnaise
1 egg
8 oz shredded cheddar cheese (sharp is my favorite)
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
FOR THE TOPPING:
2 sleeves of Ritz crackers, crushed
1 stick melted butter

Step 1: Ready the oven and preheat to 350 degrees.
Step 2: Wash the squash and slice into small dices. (Small sliced squash will make it easy to tenderize.)
Step 3: Place the sliced squash into a large mixing bowl.
Step 4: In another large mixing bowl, add the soup, eggs, mayo, and onions. Sprinkle salt and pepper to taste then stir until well mixed.
Step 5: Add in the sliced squash and stir until well combined.
Step 6: Transfer the mixture into a casserole dish meant for baking.
Step 7: Place the crackers into a resealable plastic bag then crush.
Step 8: Add in the crushed crackers into a medium mixing bowl.
Step 9: Place the butter inside the microwave and allow it to melt.
Step 10: Add the melted butter into the bowl with the crushed crackers and stir.
Step 11: Add in the crackers and butter mixture over the casserole.
Step 12: Place inside the preheated oven and bake for 45 to 50 minutes or 30 minutes with aluminum foil cover. Bake until it becomes bubbly and the color turns to brown.
Step 13: Remove the cover and bake for another 20 minutes until the top turns golden brown.
Step 14: Remove from the oven and let it sit on a wire rack to cool to room temperature.
Step 15: Serve and enjoy!
