This thirty-minute dish from start to finish is insanely delicious! Boneless skinless chicken thighs in an easy and extremely luscious creamy tomato basil and spinach sauce. Serve this over pasta, some roasted potatoes, or creamy mashed potatoes for a complete, satisfying meal that’s perfect for the family.
One of my favourite chicken cuts is boneless skinless chicken thighs because they cook quickly. And everything is made in a single skillet on the stovetop for easy clean-up. No doubt, this recipe is easy peasy and surely to keep!

Ingredients
1 tbsp olive oil
1.5 pounds chicken thighs, boneless skinless
1/2 tsp salt
1/4 tsp pepper
8 ounces tomato sauce
2 garlic cloves, minced
1/2 c. heavy cream
4 ounces fresh spinach
4 leaves fresh basil (or use 1/4 tsp dried basil)
Serving:
1/4 c. Parmesan cheese, grated
How to make Skillet Chicken Thighs with Creamy Tomato Basil Spinach Sauce
Boneless skinless chicken thighs in a skillet:
Step 1: Heat olive oil in a large skillet over medium heat.
Step 2: With salt and pepper, season the boneless skinless chicken thighs.
Step 3: To the hot skillet, place the seasoned chicken thighs top-side-down.
Step 4: Cook over medium heat for about 5 minutes until nicely seared.
Step 5: Turn on the other side and continue to sear the chicken thighs for another 5 minutes.
Step 6: Transfer the seared chicken thighs to a plate.
Creamy tomato basil sauce:
Step 1: Add the tomato sauce, minced garlic, heavy cream in the same skillet, bring to a boil, and stir.
Step 2: Adjust the heat to a low simmer, then add in the fresh spinach and basil, stirring until the spinach has wilted and reduced in volume.
Step 3: Adjust the salt and pepper according to taste.
Step 4: Put the cooked boneless skinless chicken thighs back to the skillet. Adjust the heat to medium and reheat the chicken thighs with the sauce until thoroughly cooked through and the centre is no longer pink.
Step 5: Over the boneless skinless chicken thighs, spoon the sauce and sprinkle with grated Parmesan cheese. Serve and enjoy!
