Simply Delicious Chicken and Dumplings

Simple and delicious, this chicken and dumplings are the best meal to warm you up inside and out. My family’s favorite and one of my most loved recipes. For this recipe, I use rotisserie chicken, but I make the dumplings from scratch. This easy recipe is a foolproof recipe and guarantees the most amazing dumplings you’ll ever make!

Ingredients

4 tablespoons unsalted butter, melted

1 rotisserie chicken, white and dark meat shredded and skin removed

1/2 teaspoon smoked paprika

1 sweet onion, diced

2 tablespoons unsalted butter

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

4 c. chicken stock

2 c. all-purpose flour

4 teaspoons baking powder

6 small carrots, peeled and diced

3 ribs celery, diced (about 1 c.)

3/4 c. milk

1 can cream of onion soup you can also use cream of chicken or cream of celery

1/2 c. fresh parsley, finely chopped

1 teaspoon salt

How to make Simply Delicious Chicken and Dumplings

Step 1: Melt 2 tbsp butter in a large stockpot over medium heat. Once the butter has melted, add the carrots along with the celery, onion, and parsley. Sprinkle all the seasonings including salt and pepper. Cook for about 5 to 8 minutes or until the veggies are beginning to soften.

Step 2: To the pot, add the cream of onion soup along with the chicken stock and shredded rotisserie chicken. Mix well and bring everything to a low boil, then decrease the heat to a gentle simmer.

Step 3: Combine the flour with the baking powder and salt. Mix the milk with the melted butter. Into the flour mixture, pour the milk mixture, and mix well using a spatula until you have a smooth ball of dough. Scoop the mixture using a 1.5 tbsp capacity, cookie scoop and drop the dumpling batter balls into the simmering stew. Do this one at a time until you have used up all the dough. You should have about 15 dumplings.

Step 4: Put the lid on and cook for about 25 minutes on a low simmer until done.

Step 5: Serve the chicken dumplings right away. Enjoy!
